Shabu Shabu

Last weekend was a public holiday in Japan so we celebrated by having a little nabe party.  The nabe is the pot you see in the photo.  The party is the bits and pieces of people you see loitering around the edge of the photo.

We went for shabu shabu this time.  This means a pot of boiling stock and vegetables and then, when you want it, waving the thinly sliced meat in the pot.  Apparently it is supposed to sound like “Shabu shabu” while it is waving.  In that way “Shabu” is undercooked and “Shabu shabu shabu” would be overcooked.

We had a selection of meat on the night, both high and low grade beef and pork.  It all tasted great but I was pretty much a spectator and eater, so I will have to do this again soon and write it up properly.

Which do you like best shabu shabu or sukiyaki?

    What I love about shabu shabu is that, like the western fondue, it encourages slow eating, as well as long conversation and interaction while dining.

    I’m with you Ruth…easy cooking and slow eating are an excellent pair. Long live leisurely dining.
