Noodles and Rice

Olesniky

Once again, my photography doesn’t do the subject justice.  What you see here is a Genuine Slovakian Olesniky.  Cooked with genuine Slovakian techniques by a genuine Slovakian friend in my little Japanese kitchen

Here is the basic concept, but be warned there is a lot of adjustment to taste going on throughout the procedure.

A few potatoes

half an onion

a couple of garlic cloves

       all grated up finely together

In a large bowl mix these 3 with a small handful of flour, some black pepper, salt, caraway seeds and an egg.

Heat a little olive oil in a pan and spread the thick mixture over the bottom of the pan and cook both sides until brown.  eat straight away

These should be eaten hot and taste great with a swig of yogurt.

Apart from the grating, the process is really quick and the ingredients should be readily available where ever you are.
