Mango Cheese pound cake

Mango cheese pound cake is not the first thing that springs to my mind when I think of Japanese food.  How about you?

My wife was given this cake as omiyage (souvenir) and I am glad and thankful.  As the name suggests, it is half mango cake and half cheese cake, all cross bred with a pound-cake.  Nice, slightly moist but still a little crumbly and with a delicious taste.

It was given to us by someone who traveled home to Okinawa recently and so I guess that makes more sense of the mango part.  Who thought to combine that with cheese cake, in a pound cake, I am not sure.  But I am glad they did.  This is one to look out for.

    Tom,
This cake made me think up the famous Japanese Kasutera cake. Have you had it before? Can you come up with some real story and latest development about it? I fantasized it when I grew up. I tried to make it few times, but had not been successful.

I meant to respond to your Omachi writeups. I made my own mochi and the redbean paste. I have a very simple mochi recipe using microwave.

Thank you so much for bringing the Japanese food culture right to the front for us to enjoy. Wish you a Merry Christmas and Happy New Year 08!
