Kame Miso soup
There are probably as many recipes for miso soup as there are cooks in Japan, but yesterday I found a new favourite. I was having lunch at Yamamoto Sushi in Tsukuba and as a part of a lunch time promotion they brought around big bowls of Kame (crab) and Miso soup. It tasted like the crab had been cooked in the soup rather than just adding it after, as the taste was the sweetest, most delicious soup I can remember.
As with all good miso soup it was based on a stock, probably a dashi kind. It had beautiful clouds of white miso swirling around in the steaming hot base. Floating near the surface were finely chopped green onion and this great big lump of crab. And that was all. Nothing revolutionary, nothing too exotic, just plain old refinement.
These guys know how to do something simple very, very well and all their food showed this expertise. I’ll write about their sushi another time, but for now I am off to find some crab to try and perfect my own Kame Miso Soup.

Kame is turtle, kani is crab…FYI. Sounds tasty, though. My favorite is with small pieces of spareribs and a good amount of shredded daikon simmered in the soup for a few minutes to add sweetness.
