Kaki, Before and after

Kaki is a seasonal fruit often called persimmon around the world.  They are a very popular fruit here in the early winter bu they quickly disappear.  The solution is to dry and preserve them as you can see in the photo.  It is not uncommon to see strings of kaki hanging off apartments or verandas drying in the dry but cold conditions.  I even saw them hanging under eaves in the snow last week.  A testament to the idea that slow and steady drying is the best.

As for the flavour, it is definitely kaki flavour but sweeter and chewier.  Definitely worth a try.

    The Chinese also do a very similar version of this, widely available all year in most Asian grocery stores. I believe it is sometimes used in soups.
