Imitation Imo

Imo (Japanese sweet potato) is great.  Why you would need to imitate it is a decent question but here it is.  These guys are kind of pastry shells filled with a sweet cake kind of thing.  On top is a thin layer of custard.  It is delicious, it contains zero sweet potato and it doesn’t really look like sweet potato.  Why?  Why not.

    It seems logical that they would make an imitation of something to be consumed in the off-season, when sweet potatoes aren’t eaten as much… but this is Japan we’re talking about. Land of the Rising Genteiban.
