Chicken, mushrooms and Udon
Try this, over the weekend.
A breast of chicken cut into strips
A handful of mushrooms, I used Japanese winter mushrooms but any sort should do
A small handful of chopped onion ( I used naga negi but who cares)
A bunch of green veges
A couple of packets of udon noodles (the wider the better)
A drop of oil
A splash of soy sauce.
Throw the Chicken and onions into a fry pan or wok while you quickly boil the noodles.
Drop in the mushrooms and wait until everything is cooked.
Stir in the noodles, and green veges and splash on a little soy
Serve it up straight from the pan before it gets gluey. As you can see in the photo, I sprinkled on some shichimi (7 spices) but you could easily try some tabasco, salt and pepper or nothing at all.
As I just posted, this is a real chopstick breaker of a meal. Quick, easy, filling and it even looks good despite my presentation skills.

Tom, this looks delicious and I’m not even a fan of mushrooms. I might try it with peppers though…and it sounds pretty easy to make which is a bonus.

Wide noodles like that aren’t called udon, they are called kishimen.
